Giveaway Tuesday!

A few months ago, a lovely reader of this humble blog sent me a present. A cookbook. Little did she know, cookbooks are one of my favorite things in the whole wide world. Even on days when I don’t feel like cooking. Even when the recipes are too complex for me. Even when I don’t have the weird ingredients a recipe calls for – like saffron (does anyone in the real world actually use saffron?). I just love cookbooks.

Beanie loves cookbooks, too.
Beanie loves cookbooks, too.

And what did my dear friend, Lee, send me? A COOKBOOK!

And not just any cookbook. It was a cookbook called “Kids Cooking for Mommies,” by Holly Clegg. I’ve seen quite a few kids cookbooks before, but this book I particularly loved because it was only half about the recipes. The first part of the book was about how to actually cook with your kids. How to set up your kitchen to be kid-friendly, what tasks kids can do and what tasks they shouldn’t do, what mindset and attitude you need to cook with your kids. It was a totally fresh perspective on children’s cookbooks.

I loved this cookbook so much that I wanted to share it with you all. But I wanted to share more than just this one cookbook… So what did Miss Lee do for you all?  She sent me three of Holly Clegg’s cookbooks to giveaway. And then I got all demanding like and I asked Miss Lee to ask Holly Clegg herself to sign each book.

I ask you, Blog World, who loves you? Who loves you more than me? No one.

So…. Today, I present to you three Holly Clegg cookbooks. Count ’em – THREE HOLLY CLEGG COOKBOOKS! You’ll get a copy of “Kids Cooking for Mommies,” along with “Freezer Friendly Meals” (be sure to try the Frozen Surprise S’Mores…to die for!). Also included is a copy of Holly’s Diabetic Cooking cookbook. I am not diabetic, but this cookbook has great healthy recipes that ANYONE can enjoy.

My favorite meal to cook is Korean pork which I learned from a Japanese friend. Go figure. My whole family loves it. I serve it with edamame and homeade pot stickers! Yum. I think I will make some tonight.

  • Rachel

    Hmmm…favourite meal. That’s a difficult one!
I think at this time of year it’s got to be Sea Bass with crunchy courgette salad.
Mix some lemon juice and good olive oil with some seasoning and toss through strips of courgette (cut it with a potato peeler to make strips), rocket, basil and chopped chillies.
Pan fry the sea bass and serve it with the salad and crusty bread or sautƒ ©ed potatoes.
Divine ‚ €œ and it takes 20 minutes tops to make.

I could not possibly choose a favorite meal! My husband and I both love to cook a wide variety of meals. Since it’s summer, I suppose I’ll choose a meal cooked on the grill: a tequila and lime marinated London Broil. I’d choose to serve it with some grilled vegetables and some grill-roasted potatoes. Can you tell we like the grill in the summer?

Your blog is so fun! I just recently found it…I think through a comment you left on the Pioneer Woman’s website.

  • Diane C

Hmmmmmmm….. I would have to say my favorite meal is spaghetti.
I love your site. It is so much fun to read about your daily adventures especially the ones related to the bean.

  • Alisa

My favorite meal is italian marinated chicken breasts, steamed broccoli (or asparagus), and velveeta shells and cheese. Absolute heaven, especially in the summer when the chicken breasts can be grilled!

  • Emily

It’s so hard to choose my favorite meal because I love food..but since you are making me choose I would have to say it’s the pepper steak my husband makes, served over rice with a nice warm loaf of crusty french bread. It’s really good but he won’t even let me in the kitchen when he makes it so I’m not sure exactly what makes it so good but given time I am sure I could duplicate it…if I wanted to but I don’t because I like it when he cooks for me! 🙂

  • Toni S.

My fav. meal? Wow…Well, my fav to make is my homemade Chicken Alfredo. Soooo good! My fav. to be made for me is Rosemary Chicken on the grill with Black Olive Aioli. I am following you on both FB and T.

  • Deb

My favorite meal is practically anything Mexican. So, I’ll go with chicken burritos as my fav with rice, lettuce, tomatoes, sour cream, and cheese poured on top. MMMMM!

  • Jordan

how fun! The thing I like about your blog is that there is a solid following, but not thousands of people to fight for winning a prize! The odds are much better 🙂

My favorite meal is when we take all the leftover veggies in our fridge at the end of the week and make stir fry! It’s different every time, and so easy!

  • Alexandra

I’m not even sure if I can narrow down my favorite meal. I would probably have to say either seared ahi tuna, basically rare; sushi; or a nice NY strip with some fresh grilled asparagus and mushrooms ~ yum!
Congrats on the little Bean ~ he is gorgeous and you and Chris just look amazing and so radiant 🙂
    All my best ~ A

  • SusanL

I Love Cheese & Onion Enchiladas. I also Love Mashed Potatoes. I wonder if the two could go together? I also Love Taco Soup (Very Simple). I bet I could eat mashed potatoes w/Taco Soup, too!

  • Betty

I would say all food. But to narrow it down, right now I love anything Mexican. Soft tacos with rice, cheese dip, hmmmmm. I”m going to Moe’s for lunch.

  • Beth

My mom’s meatloaf. It is the BEST. I usually make the mashed potatoes because I love to make them thick and creamy. Add a side of green bean or brocolli and we have a winner!!

  • Erin

A freezer cookbook AND a kids cookbook!!! Holy cow!!! (Sorry – just a little excited because we JUST got a deep freeze!)

Anyways…my favorite meal right now would probably be my mom’s Chicken Chili recipe – lots of red and yellow peppers – so pretty AND delicious! I love it with tortilla chips on top, a biscuit on the side and a glass of milk to drink!

BTW, your blog makes me laugh all the time – I keep going back to the Drunk on Milk video 🙂 Thanks for letting us share your life!

  • Wendy

Holy Cow! So many to choose from, so little time… I think that my Pea Soup is to die for. Lots of tarragon, I’ll only eat my own as it’s loaded with honey baked ham and totally thick! Also, I love cookbooks! Must have over 100 of them as I read them like some people read romance novels! Each and every one is special in it’s own way.
BTW, love your blog site! We think so much alike it’s scary!

  • Sue V.

My favorite meal to make (because all of my children love it) is Taco Casserole – very easy to make:
Crush a bag of Dortios and place in the bottom of a 9×13
Brown 1 lb ground beef, drain and add a pkg of taco seasoning
Remove beef from heat, add a can of Cambells Nacho Cheese soup, and half a can of milk. Stir until combined. Put this mixture on top of Doritos. Top with chopped lettuce, chopped tomatoes (or salsa). Sprinkle with mozzarella cheese and bake at 350 for 20 minutes.

  • Amy N.

Mmmmm….food. There’s no way to choose a favorite meal, but so far this summer I’ve made kabobs and grilled veggies with a balsamic vinegar marinade that is to die for.

Your blog is a hoot. I’m a friend Sarah R. (mom of The Cutest Kid)–actually, Sarah’s big sister and I were in the same class and we were doubles partners in tennis. Love that whole family.

  • Brandi

Hi Kate! I am delurking so I can leave a comment!! Congratulations on the Beaner’s birth! I am happy for you and he is so handsome! Just wanted to enter the giveaway because I NEED a cookbook. I do not cook much because I am not very good at it. My favorite meal is anything I can get at a restaurant! ha!

  • Christina Rhoades

Well, I love food! If I had to choose one…it would have to be my Mom’s mashed potatoes, they are whipped just right with just enough butter and milk. I love all kinds of foods though, chinese, Thai, Indian (they use safron in Indian cuisine), a good all American Hamburger and fries and of course chocolate and ice cream are at the top of my list too!

  • andrea

right now, being 22 weeks prego i’d say my favorite is, ANYTHING!!!
but i love making my homemade Mac and Cheese, i have never had a taste tester that didn’t love it! It’s the only mac and cheese my husband will eat. sometimes i throw in broccoli and/or bacon. serve it with pineapple salad (iceberg lettuce, cream cheese chunks, pineapple and miracle whip) and some blueberry muffins, simple yet so satisfying. I know it sounds odd but it’s been a family favorite for four generations now. just the mac and cheese is also a great side dish for a big family dinner. and it is absolutely awesome to eat cold the next day, better then cold pizza!

  • Colleen

Meat muffins- they are mini turkey meat loaves baked in muffin tins. They are amazingly easy to make, easy to clean up (only one bowl), freeze/reheat really well, no freaky ingredients, room for personalization (BBQ sauce instead of ketchup), jam packed with flavor AND healthy! Served with some Italian greenbeans and potatoes- YUM

  • Elizabeth

Meatloaf, mashed potatoes and green bean casserole. A wonderful Southern meal with a million calories. The best!

  • Leah

Favorite meals are tough. My hubby and I are total foodies and we love trying new things all the time. My favorite meal that he makes are filets with a red wine peppercorn sauce with goat cheese and a beautiful baked potato. Yummy!

  • Hilary

It would be impossible to pick a favorite meal, but I did make a mean Chicken Tetrazzini last night. The catalyst which prompted this choice was a segment on “The Soup” (I adore Joel McHale and hubby and I watch it every week). Well, it was a talk show clip they were showing where a woman accused her best friend of luring her husband into an affair by cooking him Chicken Tetrazzini. At first, I laughed and then thought, “hmmm, I should try that recipe if it is powerful enough to seduce a man into cheating on his wife!” Well, I don’t know if it’s “ruin your relationship” good, but my little family loves it!

  • Emily

Hmm, I really like food and cooking, so it’s kind of hard to choose. I’d say my favorite meal to cook is probably Not-So-Sloppy Joes. I make a homemade bread recipe, seperate the risen dough into oversized roll portions, roll it out flat, and then place homemade Joe mix in the middle of the flat dough. Seal it up, calzone style, and bake. They’re sooo good, and fun to make because I love making bread and I love putting all the different spices and ingrediants to make the Joe mix taste perfect.

Also, I’m due in about 9 days with my little beaner (also to be named Michael!) and he has that same onsie waiting for him to wear!

  • Jes the Bes

My favorite meal is so easy , but not to healthy. It is called “homemade tacos”.

    1. Fry up some corn tortillas
    2. Brown 1 lb of ground beef
    3. Stir in Ranch Style Beans (only found in the south) with the ground beef and heat thoroughly.
    4. Place a little bit of ketchup on the cooked tortilla, top with ground beef mixture, and other taco fixtures you enjoy (lettuce, cheese, tomatoes, sour cream, avocado, etc)

    Yum!!!

  • Sandy

OK, so how old fashioned am I? I am a meat and potatoes kinda gal‚ ¦good ole’ pan fried steak, baked potato and salad. I know, boring, but oh so good ;- )

  • Lori

Call me old fashioned (or incredibly unhealthy) but my favorite meal is meatloaf with mashed potatoes and green beans–hold the gravy. I heart mashed potatoes.

  • Casey

I also love the meatloaf, mashed potatoes, mac and chz w green beans. But My favorites are chicken and dumplings or sour cream and chicken enchiladas with a mexican salad. YUMMMM

  • Sar

My favorite meal in the whole wide world would have to be…fried chicken, macaroni and cheese, field peas, fried cabbage with a banana pudding for dessert!

  • Tina

Does ice cream count? Just kidding!
I think my favorite would be rigatoni in vodka sauce with garlic bread and a nice big salad…pretty girly right? That’s why I never get to eat it..hubby needs some meat with every meal. But I do eat it sometimes when he’s out of town!
I follow you on twitter too:-)

  • Tammy

I really like to cook Chinese potstickers. The dough is really easy to make, and you can fill them with anything you like, then you just fry them a little, and add some water to the pan and let them steam for about 10 minutes. Easy, and it is even easier to make a ton, and freeze them before cooking. I think I’ll do that this weekend!

  • Katie

Hm…hard question. But my favorite go-to weekday meal is homemade pizza. We do all kinds – BBQ chicken, buffalo chicken, feta with jalapenos (YUM), you name it. Pillsbury pizza dough is THE best when you don’t have the time or the yeast to make your own!

  • Kimberly P.

My favorite meal is turkey, mashed potatoes with gravy, sweet potato casserole, stuffing, jellied cranberry sauce, green bean casserole, hot buttered rolls, and cheesy grits. So pretty much a Thankgsgiving meal. 🙂

I’m going to sign up with you on Facebook, now.

    Kimberly 🙂

  • Donna

Decisions decisions, I would have to go with anything spicy. My green chili sour cream chicken enchiladas or if I am going out to eat pad kee mao or Charlie special, I could go on‚ ¦

  • Stacey

Love food–love Italian food, love Mediterranean food, love Mexican food…a favorite would have to be chicken enchiladas (a pan of which can also be frozen and served later)!!

  • Haley

My favorite meal would have to be a big bowl of homemade stew with big chunks of meat, potatoes, carrots and celery with crackers.
Yum…please excuse me as I go get my stew on.
    Thanks

  • Tanya

One meal.. just one.. That’s a hard one but I guess it would have to be Grandma’s Chicken Cacciatore.. so good, the chicken falls off the bone.

  • Alison

spaghetti squash – tossed with parm, olive oil, garlic, and diced tomatoes…

a beautiful salad, some grilled chicken, and away we go 😉

    your little one is dreamy!

  • Kathryn

My favorite meal – that is hard to pick just one!!!! Possibly it’s ham/pototo/cheese casserole. It’s sooooo good. I also really love a good meatloaf. yum! (-:
    ~Kathryn

  • Shauna

My favorite is Spaghetti Pizza and garlic bread. I just love this. This is my familys favorite and I only make it on special occasions.
    love your blog

    shauna

  • Laura

My favorite meal is Barbecue Chicken with grilled tatos and green beans. Love. It. Yum. I guess I should get me a kids cookbook for when Gooner gets older huh. Would be good. I guess she doesn’t need to start out with the gourmet stuff…cause that’s ALL I cook. Especially with all my free time. Gourmet. ha.

  • Amber

I love your blog. I never thought I would be so interested in waiting for a stranger to give birth!

My favorite meal is easy but classic: Lemon garlic Chicken with angel hair alfredo.

I use fresh lemons to marinate the chicken and I make homemade alfredo. A nice salad and some garlic bread make the perfect finishing touches. Wow, I am hungry now.

  • Kate

Hello – being currenlty pregnant, it changes pretty rapidly (Sunday it was ketchup and toast – I don’t know why). My favorite recipe normally is for my Mother’s Thanksgiving dressing. It is so rich, it is really a meal unto itself. It is a recipe that has been handed down through at least three generations (four, if you count me – though I have never yet attempted making it by myself). It is fun to make b/c my Mom and I are in the kitchen for about 5 hours or so putting it together; we only have it once a year which makes it even more special; and it is something that embodies all of my best memories of home and family.

  • erin

Oooh, favorite meal. That’s a hard one. Lately, this pasta thing with Italian sausage, fennel and leeks. Oh man is it ever good.

Btw, I use saffron a lot in paella. 🙂

  • Courtney

My favorite meal to cook is Thanksgiving dinner! It may sound crazy, but I love doing as much as possible from scratch. Usually, I have to start a couple of days in advance to get everything done. I feel as if it’s my little way of giving thanks for my family by making them a meal to remember!

  • Emily

Ok, this is a tough one! I asked my husband and he said (without hesitation) steak with mushroom gravy and mashed potatoes. I asked if he’d want a veggie or something to go with it and he responded “eehhh” so I guess that means it optional. Right now I could really go for a big salad, cheesy-broccoli-potato soup with crusty bread and chocolate cake for dessert! Hmmm… all this thinking about food made me hungry, I think I’ll go make lunch.

  • Jenny

My favorite thing to make is Asian burritos — it’s basically a lettuce wrap, but in a tortilla instead of lettuce. I usually make the filling with ground beef or chicken and broccoli slaw. It’s super fast to make and delicious!!

  • Liz

Ever since I was a little kid, when my mom would ask me what I wanted for dinner I would over-enthusiastically exclaim, “chickenchickengravymashedpotatoesandcorn!!”

It’s still my favorite. My mom makes the most incredible chicken gravy. Mmmmm!

  • Laura

My favorite meal is lasagna, garlic bread, and fruit salad. YUM! However, I hardly ever get to have it because my husband has some strange aversion to tomato products. And when I was pregnant, garlic gave me acid reflux. I should have a green light to eat it now though! 🙂

  • Heather

Hmmmm…. My favorite meal… To choose only ONE?? Eeeeeeeeek!! Ok… I suppose likely my homemade spaghetti sauce, Pasta and fresh homemade bread… (have the recipes for both the sauce and the bread if you want ’em). They make the house smell AMAZING before you even consume a morsel… So, those are the ones. My Go To dishes… With a close 2nd being meatloaf… I am making that tonight for a friend I haven’t seen in 18yrs…!

    Big hugs
    Heather

  • Mendi

Ok…favorite meal, has to be Fried fish or shrimp and cheese grits….I can almost taste it now! And of course, I follow you on FB! 🙂 Hope sweet Michael is doing great!

  • Courtney d

Favorite meal: filet mignon rubbed with McCormick Grillmates Montreal Steak seasoning, cooked on the barbecue by my husand, with a side of twice-baked potatoes and a glass of Ramey red wine. Yum!!

  • Maria

Oooh, tough question. I think my favorite meal to have at home is tacos. So yummy!

I’m a fan on Facebook and I follow you on Twitter, too!

  • Angela

Slow Cooker Roast Beef with potatoes, carrots and onions. Delicious and Easy!
(And it’s a husband pleaser, unlike my other favorite of mashed potatoes and corn; not a meal, he says.)

  • Kate

My favourite meal right now (and so far my only pregnancy craving) is Jack Astor’s (a Canadian restaurant chain) Chopstick Chicken Salad – lettuce, cucumber, peppers, chow mein noodles, dried cranberries, pecans, spicy sesame dressing. So good – I could honestly eat it everyday. I definitely need to replicate this salad at home. My mouth is watering just thinking about it.

Not bad as far as pregnancy cravings go, eh? 🙂

  • doug

my favorite meal is homemade sausage and peppers. it takes hours and hours to prepare but when it is done it is like heaven. it has just the perfect mix of spicy and sweet.

  • Natalie

Being pregnant has really changed what my favorite meal is. Right now, its blueberry pancakes! Not regular panckes, only blueberry!

  • Kristen

I heard about your contest by following HollyClegg on twitter! My favorite meal is salmon sushi, ginger salad, and miso soup. But since I’m pregnant I’ll post another favorite: chicken sausage jambalaya, white beans, sensation salad.

  • Lauren Elizabeth

Umm…anything I don’t cook? Haha. Since its summer, chicken salad, fruit salad, and key lime pie. Yum!

  • Mandy

I am so with you on the love of cookbooks. Growing up, I never cared much about cooking, but I suppose that getting married turned it all around for me. Joe (my hubby) loves cooking too, so for a while it turned into something of a hobby and just a fun activity for us to share… plus the benefits of a wonderful home-cooked meal. My dear wonderful mom-in-law subscribed me to Cuisine at Home for a wedding gift, and we have loved it so much that we’ve continued subscribing every year after!

As far as a favorite meal… it’s hard to pick. These days Joe (who works outside for 9+ hours a day) comes home really exhausted. While I love for us to cook together, I’ve been taking over the cooking department so that he can come home and relax before dinner. So if you wanna get mushy, I’d say that any meal he and I cook together is my fave, since it doesn’t happen so much anymore. Ditching the mushiness, my favorite meal to eat is chicken lo mein. Unfortunately I’m not ready to try cooking that yet. So my favorite meal to cook is probably one called “Italian Style Winter Soup.” It’s more like a stew than a soup when I make it… totally a comfort dish, and it makes the house smell amazing for hours. 🙂 And I get to use those weird seasonings – except for saffron.

  • Sabrina

Favorite meal? Thanksgiving & Christmas. The dressing that I make is a family recipe and is entirely made from scratch and takes two days to cook.

Favorite weekday meal? My meatloaf with mashed potatoes & purple hull peas. Or that mexican casserole I can’t remember the name of.

    I loooovvvvveeee cookbooks!

And as one who plans to have kids someday, THANK YOU so much for giving the details that no one tells you about. Thank you, thank you, thank you!

  • Nikki

I love cookbooks even though I can’t cook too well 🙁 I do like to try though! My favorite recipe when I cook would have to be spaghetti since I can go the whole time without ruining it, but if my mother is cooking I love over baked chicken with mustard greens…yum!!

  • Vandy

Green chile cheese burgers with everything on them! Definitely a favorite fresh off the grill in summer. Green chile on anything, really! And my homemade pumpkin soup made with pumpkin pulp that I prepare myself and store in the freezer during the fall squash season. Very easy, tasty, healthy, and also beautifully colorful!

  • Amanda

I’m not sure I have a favorite meal actually. I love trying new things, so my favorite is always changing. Spagetti can always make me happy though.

PS – my 5 month old has that same blue onsie (set) that the Bean has in this picture. My favorite from that set says “property of mom FOREVER” 🙂

  • Michele

Without a doubt, the Thanksgiving meal. I have used the same recipes for fresh cranberry sauce, our special family stuffing, and broccoli casserole for years! It’s the only time of year I make these side dishes and the whole family looks forward to them. I think what’s best about Thanksgiving is sharing good food with the whole family.

It’s different from Christmas, when the whole “present” thing detracts from a long leisurely meal.

  • Annie

Im going to go with an appetizer. It’s made with cheeze-whiz which sounds disgusting but it is the most incredible cheese dip. I love it. I make it for every party I go to! Everyone loves CHEESE!

  • Jilene aka NONA

My favorite is Spaghetti! We are an Italian family and we love to eat!! Don’t forget the bread to sop up the sauce with!!!

  • Jennifer Andersen

when i was pregnant it was hands-down Belgian waffles with strawberries, bananas, and whipped cream. these days I love the Macadamia Nut Encrusted Halibut at Claimjumpers – how I adore that mango sauce they use on it!

  • Melissa

First I think you should collect everyones recipes and make a cookbook of your own, for all of us of course (in your spare time from the bean of course).
For my fav recipe I would have to say my families eggs benidict, It is saucy with everything chopped up. Very rich! Have some Mimosa’s and fruit your good for the day. I follow you on FB also.

  • Keiko

Hmm… favorite meal… I think my favorite is the one that Serena enjoys making with me – pancakes and eggs with a side of fruit(and sometimes we add bacon or sausages for Daddy). She is only 2.5 and I am not really a big cook in the kitchen, but we have a blast gathering all the ingredients, pouring them into the bowl and mixing up the batter. We like to be creative and add chocolate chips, bananas, blueberries, you name it. For Father’s Day we ran out of chocolate chips, so we melted some baking chocolate I had in the closet and made banana chocolate swirl pancakes. And they were yummy so we will definitely be making them again 🙂

  • Jen Hill

This is not really a meal. It’s a side dish. A casserole. So Yummy!!
ok-here it goes. Ingredients needed: 1-5oz packet of yelllow rice, 1 can of mexicorn, 1 can of cream of chicken/celery/mushroom (I use cream of chicken), 1 can of lesueur peas, 1 small tub of sour cream, 2 cups shredded cheddar
Add all the ingredients into a rectangular glass baking dish (except 1 cup of cheese)-stir until well mixed. sprinkle remaining cup of cheese on top. bake at 400 degrees for about 45 minutes. May take longer-if it is jiggley when you go to remove from oven -it is not ready. ha.

  • Liesel

I too love to cook so it changes often. Currently it’s Pioneer Woman’s ginger steak salad and crash hot potatoes. To die for! And I love love cookbooks too! Since my husband was unemployed for the past 11.5 months, I haven’t bought a new one for a long time. Hope I win these!

  • Abby

My favorite meal is anything seafood…when I cook my favorite recipe for guests I make my own version of paella — no sausage, or chicken, just SEAFOOD (shellfish, specifically for this recipe): I use basmati rice (best flavor and I prefer the texture to shorter grain rice) and every type of fresh shellfish I can find (and afford): shrimp, scallops, calamari, clams, mussels. For the broth, I use bottled clam juice. I roast a red bell pepper on top of the stove and add strips of the roasted pepper along with a big handful of frozen peas at the very end. Oh, and the recipe starts with plenty of freshly chopped garlic and onions sauted with the best olive oil AND…SAFFRON! I garnish with freshly chopped cilantro. Serve with a big green salad including plenty of arugula. Garlic bread, too!

    Congratulations on your beautiful boy!

  • Jessie

Looks like fun! I hope you put Beanie to work soon hehe! I just had a “guest post” on my blog from my seven year old! He posted his own recipe today 🙂
I found your blog from a comment you left at PW

my boyfriend, Connor, is from New Orleans, and since we practically live together, he got me REALLY turned onto southern food0 especially his FANTASTIC Jambalaya. it’s fairly easy to make, very spicy (though we are spice fiends so we turn up the heat a lot on our recipe) and it sits really well in the refrigerator and tastes great re-heated. his recipe makes about 8 servings- and since we are only two people, one batch of this stuff serves us for about a week! crazy, huh?

here’s the recipe (but shhh! don’t tell anyone!)

    2 tbsp. olive oil
    1 red bell pepper
    1 yellow bell pepper
    1 yellow onion
    3 cloves garlic
1 14 oz. can of (canned), diced tomatoes
2 cups long-grain rice (can be brown or white, whichever you prefer)
    4 cups chicken stock
1 package kielbasa or andouille sausage
    1 sprig fresh thyme
    1/4 teaspoon cayenne pepper
    1/4 teaspoon white pepper
    pinch of gumbo file
    pinch of cumin
    pinch of oregano
pinch of onion and/or garlic powder
salt and black pepper to taste

and now for the fun part:

begin by chopping the onion and bell peppers into small (but not too small!) pieces (don’t forget to de-seed them!), then dice the garlic. turn your stove on medium and drizzle the olive oil into a large pot. let it heat up, then add the bell pepper and onion. saute until completely carmelized, then add the garlic. open up the can of tomatoes and add to the veggie saute, and stir. add the rice, then the chicken stock. at this point, begin putting your salt, pepper and spices in. my measurements were similar to what we usually do, but we never actually measure and the spices should all be done to taste. cayenne and white pepper, however, should be the most prominent. after you add the spices, chop the sausage into bite-size pieces and stir in. cover the pot and let simmer for about 20-25 minutes (30-35 if you are using brown rice). after simmering, the jambalaya should have a slightly gooey, paelella-like consistency.

i like to serve it with sweet cornbread and a cold beer.
    enjoy!
